Each object gets its own tab in the spreadsheet. Or, you can turn on an option to smoosh everything together into a single Schema tab. There is also a high-level object summary tab, and a tab that shows all of the active picklist values and the record types for each object you chose to export. You can filter out read-only fields if you want, or filter objects and fields by Standard / Custom / Managed / Knowledge / Speical categories.
You can save your object selection, so if you want to export 50 specific objects one day, you don't have to go check the boxes for them again the next time you need a fresh export. Also allows saving credentials, so you don't have to manually type in your login info each time.
I remember back in the day, we used to have to export individual objects and make our spreadsheets by hand. It was a huge pain in the rear. SDDC should entirely solve that, for admins / devs, and especially data migraiton and integration resources.
